NOTES – CAN SUBSTITUTE COCONUT YOGHURT WITH NATURAL GREEK YOGHURT. CAN USE FROZEN BERRIES ALSO.

INGREDIENTS

  • 1/2 cup chocolate coconut yoghurt (I use Pure ‘n’ Free)
  • 1 slice of a whole watermelon, cut 2cm thick
  • 1 kiwifruit, skin removed, sliced thinly
  • small handful blueberries
  • 2 strawberries, sliced thinly
  • 2 passionfruits, seeds removed
  • 1 tbsp cacao nibs

METHOD

  1. Slice watermelon into 8 equal pieces and arrange on a serving plate, similar to a pizza shape.
  2. Spread desired amount of coconut yoghurt onto each individual slice, being careful not to let it drip down the side of each slice.
  3. Top each slice with desired amount of individual fruits (or a mix of all fruits) and lightly scatter cacao nibs over the top.
  4. Pop the plate in the fridge until ready to eat. Enjoy!
