NOTES – CAN USE ANY FLAVOUR OF PROTEIN POWDER, I LIKE TO DEFROST FROZEN BERRIES AS IT CREATES A YUMMY SAUCE
INGREDIENTS
- 1 tsp coconut oil
- 1/2 banana, mashed
- 2-3 tbsps buckwheat flour
- 1 egg
- 1 scoop vanilla protein powder
- splash water
- 1 tbsp almond butter
- 1/2 cup mixed berries
METHOD

Heat coconut oil in a frying pan and bring to a medium heat.
- Combine remaining ingredients in a bowl and mix well, adding small amounts of water if needed to achieve pancake consistency (not too thick, not too runny).
- Cook for approx. 2mins on each side until cooked through and golden brown.
- Remove pancake from the heat, spread with almond butter and top with berries. Enjoy!
