NOTES – CAN USE ANY FLAVOUR OF PROTEIN POWDER, I LIKE TO DEFROST FROZEN BERRIES AS IT CREATES A YUMMY SAUCE

INGREDIENTS

  • 1 tsp coconut oil
  • 1/2 banana, mashed
  • 2-3 tbsps buckwheat flour
  • 1 egg
  • 1 scoop vanilla protein powder
  • splash water
  • 1 tbsp almond butter
  • 1/2 cup mixed berries

METHOD

  1. Heat coconut oil in a frying pan and bring to a medium heat.
  2. Combine remaining ingredients in a bowl and mix well, adding small amounts of water if needed to achieve pancake consistency (not too thick, not too runny).
  3. Cook for approx. 2mins on each side until cooked through and golden brown.
  4. Remove pancake from the heat, spread with almond butter and top with berries. Enjoy!
