NOTES – FOR DAIRY-FREE, USE COCONUT YOGHURT. IF THE YOGHURT IS TOO THIN AFTER BLENDING, ADD MORE FROZEN BERRIES.

INGREDIENTS

  • 2 tbsps coconut oil
  • 2 eggs
  • 2 bananas, peeled and chopped roughly
  • 1/2 cup rolled oats
  • 1/2 tsp baking powder
  • 1/2 cup natural yoghurt
  • 1/2 cup frozen mixed berries
  • pinch of himalayan salt

OPTIONAL

  • 1 tsp vanilla extract
  • small handful fresh berries

METHOD

  1. In a blender, combine the banana, eggs, oats, baking powder and salt.
  2. Blend until the mixture is smooth and allow the batter to stand for 10-15 minutes until thickened slightly.
  3. Heat a frying pan over medium heat. Add the coconut oil, then add spoonfuls of the batter to form pancakes and fry until golden brown on both sides. Remove from the heat and set aside.
  4. Meanwhile, rinse the blender and blend the yoghurt and frozen berries until thick & creamy.
  5. Pile the pancakes onto a plate with a good dollop of the berry yoghurt. Enjoy!
