NOTES – YOU CAN SUBSTITUTE OAT FLOUR WITH WHOLEMEAL SPELT FLOUR OR ALMOND MEAL
INGREDIENTS
- 1 3/4 cup oat flour
- 1 1/2 tsps baking powder
- 1/4 tsp baking soda
- 3/4 cup coconut sugar
- 3 tbsps hemp seeds
- 1 lemon, zest & juice
- 1/2 cup almond milk
- 3 eggs
- 1/3 cup olive oil
- 250g cream cheese
- 2 tbsps honey
- 1 tsp vanilla bean paste/ extract
METHOD

Preheat an oven to 180°c and grease a 12-hole muffin tray.

In a medium bowl, mix together the flour, baking powder, baking soda, coconut sugar, hemp seeds and zest. Set aside.
- In a large bowl, whisk together lemon juice, almong milk, eggs and olive oil.
- Add dry ingredients and stir until all combined.
- Spoon batter evenly into muffin holes and bake for approx. 15-20 mins or until cooked through.
- One cooked, allow muffins to cool before frosting.
- To make frosting – add cream cheese, honey & vanilla into a bowl and mix to form a smooth frosting. Spread over muffins & enjoy!
