NOTES – YOU CAN SUBSTITUTE OAT FLOUR WITH WHOLEMEAL SPELT FLOUR OR ALMOND MEAL

INGREDIENTS

  • 1 3/4 cup oat flour
  • 1 1/2 tsps baking powder
  • 1/4 tsp baking soda
  • 3/4 cup coconut sugar
  • 3 tbsps hemp seeds
  • 1 lemon, zest & juice
  • 1/2 cup almond milk
  • 3 eggs
  • 1/3 cup olive oil
  • 250g cream cheese
  • 2 tbsps honey
  • 1 tsp vanilla bean paste/ extract

METHOD

  1. Preheat an oven to 180°c and grease a 12-hole muffin tray.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, coconut sugar, hemp seeds and zest. Set aside.
  3. In a large bowl, whisk together lemon juice, almong milk, eggs and olive oil.
  4. Add dry ingredients and stir until all combined.
  5. Spoon batter evenly into muffin holes and bake for approx. 15-20 mins or until cooked through.
  6. One cooked, allow muffins to cool before frosting.
  7. To make frosting – add cream cheese, honey & vanilla into a bowl and mix to form a smooth frosting. Spread over muffins & enjoy!
